CREAMY AVOCADO PASTA

This is the best summer recipe! I’ve been making it almost every week lately. It’s ready in 15 minutes and 100% vegan.

Ingredients

  • 2 portions of dry pasta of your choice (I like to use linguine with this recipe)
  • 1 large avocado (or two small avocados) with the pit removed
  • juice from 1/2 to 1 lemon (depending on how juicy your lemon is)
  • 1-3 cloves of garlic (to taste)
  • 2 tablespoons of olive oil
  • salt & pepper to taste

and here is the recipe!

  1. boil a large pot of water & cook your pasta according to the instructions on the package
  2. meanwhile, mix the garlic, olive oil and lemon juice in a food processor (or blender)
  3. pit your avocado(s) and add them to the food processor - blend with the garlic/oil/lemon juice until smooth. In the end the sauce should be creamy and fairly thick - taste and see if you need to add more avocado, lemon juice or olive oil to get the consistency you want!
  4. now it’s time for spices! I always use salt, pepper, and cayenne flakes with this. always taste as you are adding spices  :)
  5. once your pasta is ready, drain it and mix with the avocado sauce so that the sauce coats all the pasta.

this recipe is best right after it’s made so serve it right away!

  • makes two portions (though you can easily double the recipe for 4 portions)
  • prep time (sauce) : 5 minutes
  • cook time (pasta) : 10-15 minutes
  • approximate cost (based on my grocery store, including quebec taxes, assuming you already have olive oil at home) : 5,50$ (2,75$/portion)
